I know quotes are uber cheesy, but I was reading the ongoing chat with Ann Cashion (Former Chef/Owner of Cashion’s Eat Place, Co-Owner of Taqueria Nacionale and Co-Owner of Johnny’s Half Shell) on Don Rockwell.com and found her comment on ingredients to be very insightful and similar to my own thoughts on cooking. She of course has Chef and Owner credibility so I will defer to her eloquent words…
Ingredients. Respect them. Find the splendid in the the every day. Exalt the vernacular. Go with what you know, intimately.
Did I mention she went to Harvard undergrad and did 2 years of PhD work at Stanford before leaving it all behind to start a life in the culinary world. Yeah. She’s a smart one.
